Ignacio is a co-founder and CIO of Estruc24 and Plat Institute, an innovation company. There he offers consulting, manages, and develops projects related to disruptive creativity, communication, technology and education, technology and education. Currently, his practice focuses on applying his know-how in different areas of the food industry, especially in the R&D of the food of the future. It is what he calls Augmented Gastronomy.
